Dry roast peanuts till crunchy. Let them cool. Then, remove the skin and add to a grinder jar.
Grind the peanuts to a coarse powder. Keep aside.
Add roughly chopped ginger, garlic and green chilies in the same grinder jar.
Add some water and grind to a smooth paste. Keep aside.
Next, take finely chopped coriander leaves in a bowl. Add the prepared paste.

Add coarsely ground peanuts and white sesame seeds.
Add gram flour (besan), sugar and salt. To know more, swipe up!
Mix everything and begin to add water in parts.
Adding water in parts, mix well into a thick batter.
Now, add the prepared batter in a pan greased with oil.

Once the water comes to a boil, lower the heat. Holding with tongs, carefully place the pan with the batter on the trivet in the pan.
Cover with a lid and steam on low to medium heat.
Once done, check with a toothpick, it should come out clean. When the steamed kothimbir vadi cake cools, gently remove the entire cake on a plate.
Now, cut into square, diamond or any shape you like.
Next, fry the kothimbir wadi slices in hot oil till both sides are evenly crisp and golden. You can even deep-fry.
Place the pan fried kothimbir vadi on kitchen paper towel for extra oil to be absorbed.
