Ingredients:
1 pound ground beef
1 small onion, diced
1 packet taco seasoning
1 can (10.75 ounces) condensed cheddar cheese soup
1/2 cup sour cream
1 cup shredded cheddar cheese
1 package (32 ounces) frozen tater tots
1 can (14.5 ounces) diced tomatoes, drained
1 can (4 ounces) diced green chilies, drained (optional)
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
Sliced jalapeños (optional, for garnish)
Instructions:
1- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is translucent. Drain any excess grease.
3- Stir in the taco seasoning and cook for an additional 2-3 minutes. Remove from heat.
4- In a mixing bowl, combine the condensed cheddar cheese soup and sour cream. Mix well until smooth.
5- Spread the ground beef mixture evenly in the bottom of the prepared baking dish.
6- Layer the frozen tater tots over the ground beef, covering it completely.
7- Spread the cheddar cheese soup and sour cream mixture over the tater tots.
8- Top with diced tomatoes and diced green chilies (if using). Season with salt and pepper.
9- Sprinkle the shredded cheddar cheese over the top of the casserole.
10- Bake in the preheated oven for about 40-45 minutes, or until the tater tots are golden brown and crispy.
