Ingredients:
4 medium-sized sweet potatoes
1/2 cup unsalted butter
1 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup water
Instructions:
1- Preheat your oven to 350°F (175°C). Grease a baking dish or casserole dish.
2- Peel the sweet potatoes and slice them into thick rounds or chunks.
3- In a saucepan, melt the butter over medium heat. Add the brown sugar, ground cinnamon, ground nutmeg, salt, vanilla extract, and water. Stir well to combine.
4- Bring the mixture to a simmer, stirring occasionally, until the sugar is dissolved and the sauce is smooth.
5- Add the sweet potato slices to the saucepan and gently toss them in the sauce until they are well coated.
6- Transfer the sweet potato mixture to the greased baking dish or casserole dish, spreading it out evenly.
7- Cover the dish with foil and bake in the preheated oven for about 45 minutes.
8- Remove the foil and continue baking for another 15-20 minutes, or until the sweet potatoes are tender and the sauce has thickened.
9- Carefully remove from the oven and let the candied sweet potatoes cool for a few minutes before serving.
