Mini Baked Parmesan Potato Rounds


4-5 medium-sized potatoes, washed and sliced into 1/4-inch thick rounds
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish (optional)


1- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

2- In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, paprika, salt, and pepper. Mix well.

3- Brush each potato round with olive oil on both sides.

4- Dip each potato round into the Parmesan mixture, pressing lightly to coat both sides evenly. Place the coated rounds on the prepared baking sheet.
