Italian Drunken Noodles

Ingredients:

8 ounces spaghetti noodles
1 pound Italian sausage, casings removed
1 onion, thinly sliced
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1/2 cup white wine (such as Pinot Grigio)
1 can (14.5 ounces) diced tomatoes
1/4 cup tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1/4 cup fresh basil leaves, chopped
Grated Parmesan cheese, for garnish
Fresh parsley, for garnish

Instructions:

1- Cook the spaghetti noodles according to the package instructions until al dente. Drain and set aside.

2- In a large skillet or pot, brown the Italian sausage over medium heat until cooked through and crumbled. Remove any excess fat.

3- Add the sliced onion, minced garlic, red bell pepper, and yellow bell pepper to the skillet with the sausage. Cook until the vegetables have softened, about 5 minutes.

4- Pour in the white wine and cook for 2-3 minutes, allowing the alcohol to evaporate.

5- Add the diced tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes, salt, and black pepper. Stir to combine everything well. Let the sauce simmer for about 10 minutes to allow the flavors to meld together.

6- Add the cooked spaghetti noodles to the skillet and toss them in the sauce until well coated. Cook for an additional 2-3 minutes to heat the noodles through.

7- Remove from heat and sprinkle the chopped fresh basil over the noodles. Give it a final toss.

8- Serve the Italian Drunken Noodles hot, garnished with grated Parmesan cheese and fresh parsley.
