Hearty Hamburger Soup Recipe

Ingredients:
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced   
4 cups beef broth
1 can diced tomatoes, undrained
1 cup frozen corn kernels
1 cup frozen peas
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Directions:
1- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
2- Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.
3- Add the diced carrots and celery to the pot and continue to sauté for a few minutes until they start to soften.
4- Pour in the beef broth and diced tomatoes with their juices. Stir well.
5- Add the frozen corn kernels, frozen peas, dried thyme, dried oregano, bay leaf, and season with salt and pepper to taste. Stir to combine all the ingredients.
6- Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 30-40 minutes, or until the vegetables are tender.
7- Remove the bay leaf from the soup before serving.
8- Ladle the hearty hamburger soup into bowls and garnish with freshly chopped parsley.
