Country Apple Dumplings

Ingredients:

2 large Granny Smith apples, peeled and cored
2 cans refrigerated crescent roll dough
1 cup unsalted butter
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 can (12 oz) lemon-lime soda (such as Sprite or 7-Up)
For the cinnamon sugar topping:

2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Instructions:

1- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2- Cut each apple into 8 wedges, for a total of 16 apple slices.

3- Unroll the crescent roll dough and separate into individual triangles.

4- Wrap each apple slice in one triangle of crescent roll dough, starting from the wider end and rolling towards the pointed end. Place the wrapped apple slices in the greased baking dish.

5- In a saucepan, melt the butter over medium heat. Stir in the granulated sugar, vanilla extract, and ground cinnamon until well combined. Bring the mixture to a simmer, stirring occasionally.

6- Pour the butter and sugar mixture over the apple dumplings in the baking dish.

7- Pour the lemon-lime soda around the edges of the baking dish, but not over the dumplings.

8- In a small bowl, mix together the granulated sugar and ground cinnamon for the topping. Sprinkle the cinnamon sugar mixture evenly over the dumplings.

9- Bake in the preheated oven for 35-40 minutes, or until the dumplings are golden brown and the apples are tender.

10- Serve the warm Country Apple Dumplings with a scoop of vanilla ice cream or a drizzle of caramel sauce, if desired.
