Chicken and Dumplings

Ingredients:

1 whole chicken, cut into pieces
4 cups chicken broth
2 cups water
1 onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
For the dumplings:

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted

Instructions:

1- In a large pot or Dutch oven, combine the chicken, chicken broth, water, onion, carrots, celery, garlic, dried thyme, bay leaf, salt, and pepper. Bring the mixture to a boil over medium heat.

2- Reduce the heat to low and simmer, covered, for about 1 hour or until the chicken is cooked through and tender.

3- While the chicken is cooking, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, and salt. Add the milk and melted butter, stirring until just combined. The dough will be slightly sticky.

4- Remove the cooked chicken pieces from the pot and set them aside to cool slightly. Once cool enough to handle, remove the skin and bones, and shred the chicken meat into bite-sized pieces.

5- Return the shredded chicken to the pot and bring the mixture back to a simmer.

6- Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot and let the dumplings cook for about 15-20 minutes, or until they are cooked through and puffed up.

7- Remove the bay leaf from the pot. Taste and adjust the seasoning with salt and pepper if needed.
